We are the teaching center of the University of Gastronomic Sciences of Pollenzo, we can delve into the topics relating to our work, with a good degree of technical in-depth analysis or lightly, depending on how in-depth we want to go.
In any case, the visits are always understandable, interactive and stimulating.
Our first objective is to explain in general the very complex world of "Balsamics" and Vinegars in general. Only later, if you wish, will we tell you about us and our story.
We are here every day, sometimes even on weekends. You are therefore always welcome. We only ask you to book and not to include this visit just to fill a day, because "you don't know what to do". In this case we recommend the municipal vinegar factories present in the Reggio or Modena area.
We love curious guests who want to know and understand. Also and above all through tasting, which is an integral part of the experience together with the visit.
From the beginning we try to facilitate knowledge of the entire surrounding area. We are aware that for travellers, especially "foreigners", there are no administrative limits. For this reason, despite being proudly REGGIANI, the reference territory is the EMILIAN one. In fact we are part of the visitemilia.com project
Acetaia San Giacomo can be visited in its entirety with 4 variants.
In addition to the visit with basic tasting, extra services can be added such as an aperitif, a guided tasting of Parmigiano Reggiano and local wines and a visit to the Castellazzo social dairy.
