One of the oldest products and, unfortunately, one of the most mistreated.
Today it is no longer possible to go into a shop and ask generically "A balsamic vinegar please!". The risk of seeing a product that does not reflect tradition is very high

Very briefly we can say that the true Traditional Balsamic Vinegar is only what is called "Traditional Balsamic Vinegar of Reggio Emilia" or "of Modena" (depending on the province of production, but only in these two) both DOP, both aged MINIMUM of 12 years up to MINIMUM 25 years.
In this category you will find these precious Traditional Balsamics: only and exclusively cooked must coming from grapes from the province, aging in batteries of different barrels, and lots and lots of patience.
