Many people from Emilia, Reggio Emilia like me, connect tortelli verde to their childhood, making it an unforgettable dish and one of their absolute favourites.

Spinach, chard, 26 month Parmigiano Reggiano, a few secret touches and the work of art of Trattoria Cognento is done.

As Reggiani, much less ricotta than their cousins ​​from Parma, Modena or Bologna. Just a touch.
