**Attention:**
The shipment takes place strictly on Wednesday , to allow the Trattoria to work on time.
Consequently to receive the pasta during the week we recommend purchasing it by Tuesday morning.
The pumpkin tortello is a very delicate territory. Sweet? Too sweet? spicy? mustard? macaroon? and so on and so forth.
The beauty of these dishes is that each family has its own recipe, which is obviously the best of all. Cognento's pumpkin tortello is the "Reggiana-style" one. "Violina" pumpkin, good Parmigiano Reggiano , no mustard and no amaretto. Just a whiff of nutmeg.
AND the balance made tortello.
Recommended simple ones drowned in butter and dried with Parmigiano-Reggiano or in the "vintage" version with red sauce (based on chopped onions fried for a long time in beaten lard and with a spoonful of tomato paste dissolved in a glass of water).
**Attention:**
They have not been pasteurized to safeguard the aromas and organoleptic properties as much as possible.
Stored in a modified atmosphere, the expiry date is two weeks (14 days), obviously keeping them in the fridge.
If you put them in the freezer you can keep them as a strategic reserve in case of unexpected visits. Just consider that they will be a little more delicate when cooking, but if you handle them carefully, the result is excellent.
By the way, cooking time is 5-6 minutes when used fresh, 6-7 when frozen. In any case, taste a small piece of the edge to make sure they are cooked!
INGREDIENTS : pumpkin (35%), type 0 soft wheat flour, parmigiano reggiano, eggs, breadcrumbs, sugar, nutmeg, salt, corn seed oil. Sprinkled with semolina. The ingredients highlighted in bold may cause reactions in allergic or intolerant people. Contains traces of nuts.
