The balance between the flavours and consistencies of the vegetables , these are the most important variables for this giardiniera, obtained by transforming seasonal vegetables, strictly fresh and from crops that do not stress the soil and the surrounding ecosystem.
Giardiniera that plays on a good sweetness, not excessive, crunchiness and a fresh acidity.

A mix of the tastiest and most colourful vegetables, sweet and sour with wine vinegar aged in a Georgian amphora .

Ingredients : Celery, carrot, red and yellow pepper, fennel, cauliflower, red onion, borretana onion. Wine vinegar in amphora by Acetaia San Giacomo, High Oleic Sunflower Oil by Olearia Coppini, Ortrugo di Ziano Piacentino Formaggini and Peveri, Cervia Salt, Sugar from beets grown and processed in Italy.

Pairings:

Perfect to accompany with cold cuts or cheeses, especially if they are fatty enough to allow the sourness of the vegetables to work properly on the palate. Delicious as a side dish.

Recipe: Capon Salad:

-Boil the capon for 90 minutes, debone and cut into not too large pieces.

-Add to the Bottega Pavesi sweet and sour giardiniera (drained), add EVO oil, salt, pepper and if you like a little orange with its juice.

-Plate and enjoy.
