BalsaMela is made according to our original recipe.
The inspiration is that of Apple Balsamic Vinegar made in the hills of Modena and Reggio Emilia where it has always been made in case there were not enough grapes (there are producer associations that still do it).
The difference with other balsamics lies in the cooking of a juice which in this case is NOT grape but organic apple juice .
Let us therefore immediately understand that this is NOT a product "flavoured with... " but made 100% with organic apple juice which is cooked and then acetified in "neutral" containers to keep the aromas of the apple as much as possible (for the precisely "cotta") which take us back to when grandmother made baked apples at home.
It's sweet-sour.
The very delicate acidity deriving from the apple has the characteristic of being less intrusive and aggressive than that deriving from the grape.
By far our most versatile product, which is why it lends itself well to both seasoning meats (fatty and tasty like pork but also "white") and fresh goat's cheese or even simple vegetables, cooked or raw.
Absolutely perfect on vanilla ice cream or cream, with an apple dessert such as strudel or tarte tatin, as an ingredient for cocktails or BBQ sauces or in a fruit salad.
We have tried it 1000 times, it has amazed us 1000 times.
